Bastide de la Ciselette was founded by Robert de Salvo just nine years ago, making it one of the youngest estates in Bandol. Located near the Provencal village of Le Brulat (7 miles northeast of the Mediterranean), it is here that De Salvo farms 37 acres of old-vine Mourvedre and Grenache on lutte raisonnée vineyards of clay-limestone soils. The fruit is cold fermented for 15 days and then aged for six months in steel tanks.
Flavor Profile: Medium-bodied, dry. Bright brambleberry fruit with a limestone edge. Earthy yet elegant and defined by garrigue, herbs, and tapenade on the finish. Pair with fish stews, charcuterie, grilled poultry, fish, and veggies.
