Yeasty funk on this wine's otherwise shy nose speaks of youth and complexity. The palate comes in with vivid freshness that pervades a creamy, concentrated and layered midpalate that has a pithy, mouthwatering texture and real focus. The finish is alive and lasting, with pure lemon freshness.

The 2019 Chablis Vaillons 1er Cru has a complex bouquet of lemon verbena, orange zest, pressed white flowers and just a touch of struck flint. The palate is very well balanced with a fine line of acidity, quite saline from the start but just missing some complexity and grip on the linear finish, which leaves you wanting more. Maybe it will develop more substance with bottle age.
