70% Chardonnay and 30% Pinot Noir. A selection of grand cru-rated Chardonnay fruit from Avize, Oger and Cramant and grand cru-rated Pinot Noir from Verzenay. Suave, supple, richly aromatic. ‘Ambrosie’ is the French word for ambrosia, the nectar of the gods.

Based on 70% Chardonnay and 30% Pinot Noir, the NV Champagne Grand Cru Ambrosie Brut has a pure, clean bouquet of apple blossom and tangerine-like fruits, white flowers, spice, and ample salty minerality. Textured, medium to full-bodied, and beautifully balanced, this is another terrific effort.

Fresh, with well-knit acidity, this harmonious Champagne shows a fine, creamy bead and rich notes of raisin bread, plum compote and lemon curd, underscored by a hint of smoked walnut. Disgorged October 2014. Drink now through 2018. 500 cases made, 200 cases imported.

Based on the 2012 vintage, the latest release of Petit & Bajan's Chardonnay-dominant NV Brut Grand Cru Ambroise was disgorged in June 2020. Offering up aromas of fresh bread, crisp orchard fruit, bergamot and beeswax, it's medium to full-bodied, vinous and fleshy, with fine concentration, ripe but racy acids, a pinpoint mousse and a penetrating finish.
