On the nose, this Cabernet offers a seamless blend of creme de cassis, hazelnut, cocoa, blackberry preserves, charry meat, and blackberry pie along with suggestions of dark licorice, stewed rhubarb, strawberry, spice, and vanillin. It is rich and satisfying with chocolate brownie, yogurt, molasses, brown sugar and rhubarb notes presented in perfect balance on the palate.
Orin Swift Papillon 2015Winemaker Notes: Papillon is Orin Swift Cellars’ Napa Valley Cabernet-based Bordeaux blend—proudly consisting of all five of the varietals. Sourced from hand-picked vineyards across the various Napa Valley AVAs, this vintage of Papillon epitomizes the house style at Orin Swift—accessible, powerful and complex. The wine is aged 16 months in French oak, 40% new. The label is a photograph taken by winemaker Greg Gorman. An intense ink with a garnet rim, the wine opens with powerful aromatics of cassis, ripe boysenberry, and chaparral with hints of graphite, sage, fire -roasted meats and fresh brioche. The entry floods the palate with ripe dark fruit flavors of blackberry and black cherries as well as fresh minerality and a touch of kir and crème de menthe. With traces of tannin, the wine finishes with a lingering sweet licorice and a smooth acidity. Albert Bichot Fixin Rouge 2015Winemaker Notes : This red Fixin has a very attractive ruby red color. Delicate and discreet, the nose has subtle notes of woodland undergrowth. Fleshy and robust, this crisp and oaky wine has harmonious balance. The finish is persistent with light spicy notes. This wine can beautifully accompany braised beef, couscous and tajine dishes, game and roast pork with onions. Also great with a chicken and olive tajine, stewed boar cooked in red wine as well as strong mature cheeses such as époisses or munster.

Chapoutier Les Vignes de Bila-Haut Cotes du Roussillon Blanc 2016Tasting Note: Medium-intensity lemon in color, this wine has an aromatic nose of lemon and lime citrus zest, green apple, star fruit and honeysuckle. On the palate the dry, medium-bodied white blend is bright with some mid-palate complexity giving way to flavors suggested on the nose ultimately completing with a medium, citrus-zest-wrapped finish. There is balance between the fruit and medium acidity that is refreshing.

Taittinger Comtes de Champagne Blanc de Blancs 2006Produced only in exceptional vintage years and intended as the ultimate expression of the Taittinger style, this wine is composed entirely of Chardonnay grapes grown in the top vineyards of the prestigious Côte des Blancs. Only the first press juice is used. A small proportion (5%) of the blend spends three to four months in new oak barrels, enhancing the intrinsic qualities of the final blend. A powerful, refined, expressive and complex Champagne, with notes of citrus fruits, lime blossom and caramelized grapefruit. The long, rich ending reveals sweet licorice aromas. A perfect accompaniment to first courses such as seafood and shellfish.

This has plenty of juiciness and should be delightful in the nearer term with a good decant; however, as many have discovered this wine will age gracefully and improve with time in bottle.

Carlisle Palisades Vineyard Petite Sirah 2016Winery Note: Shimmering black-purple in the glass. Opaque. A beautiful nose of black raspberry and huckleberry complemented by notes of violets and black licorice. On the palate, medium-full bodied with flavors of blackberry and blueberry that linger through the long and gently tannic finish. Very civilized and polished, showing a more genteel side of the variety. (Petite Sirah in its youth can sometimes be a bit rough and surly.) Enjoyable now with a decant, this will age well. Drink from 2018 through 2034.

Big Table Farm Willamette Pinot Noir 2012Winemaker Notes : #11 Wine Spectator Top 100 of 2015 The use of whole cluster fermentation is the back bone of this wine. Lots of leather and oak spice on the nose. Black cherry, dried cranberry, and pomegranate, as well as cardamom and anise. Palm sugar, hay, clove and sandalwood on the palate. Very fresh and bright, approachable wine. Soft tannins, and high acid, make this a great food wine.

It is accented with toasty brioche and pastry aromas as well as rich custard and passion fruit. The chardonnay has lingering flavors and rich body but is not too heavy on the palate.
