Elderton Barossa Cabernet Sauvignon 2016

2016 was an incredible year for Cabernet Sauvignon, with great concentration. The warm dry Autumn was ideal for allowing the Cabernet grapes to reach optimal maturity, allowing the softening of tannins.
There’s plenty to admire here, with mahogany and truffle touches complementing the ripe and plush core of plum and blueberry flavors. Displays an air of effortlessness, even with the dusty tannins filling in on the finish. Drink now through 2030. 3,500 cases made, 1,000 cases imported.
A blend of fruit from Nuriootpa (75%) and Eden Valley (25%), the 2016 Cabernet Sauvignon features lovely varietal aromas of mint, tobacco and cassis. Full-bodied but firm and slightly austere, it does turn silky on the finish. Fine with steak now, it should age well for over a decade.
This is a medium- to full-bodied Cab shows notes of red currants, raspberries and florals, with a distinctive savory core and a mineral, graphite streak. The fruit is concentrated on the palate, laced with structured, sinewy tannins and an earthy, stony finish. Drink now–2023.
