WINEMAKING: Hand-harvested. Pressed directly in a hand-cranked, upright wooden press. Fermented on selected yeasts in temperature-controlled, stainless steel tanks. Malolactic conversion allowed. Base vintage 2012. Aged for a minimum of three years. Dosage 3 g/L.
TASTING IMPRESSIONS: Aromas of lemon blossoms, light herbs, brioche, light cream, lemon rind. Bright, lacy, deeply flavorful; very long.
PAIRING SUGGESTIONS: As an aperitif; with sushi or other fresh seafood; grilled white meats; very flexible at the table.

Disgorged in June 2020 and based on the 2012 vintage, the NV Brut Grand Cru Nuit Blanche wafts from the glass with notes of white flowers, preserved citrus, crisp orchard fruit, fresh bread and bee pollen. Medium to full-bodied, layered and nicely concentrated, it's quite vinous and textural, with racy acids and a pretty pinpoint mousse, concluding with a saline finish. It's as fine a rendition of this cuvée as I can remember tasting.
